Once the piñas are hand-chopped, they are baked in small brink ovens for even cooking and then crushed by a two-ton volcanic stone wheel and roller mill. This process takes time. The mixture that results from this is fermented for an additional three days and distilled. In some cases, the liquid is distilled in handcrafted barrels. Patron Reposado ages for a minimum of two months while the Añejo 7 Años ages for seven years! Time and tradition is what it takes to create perfection – from the inside – out. The entire process takes place at Hacienda Patrón. They have an eco-friendly reverse osmosis irrigation system and recycle the agave byproduct. Only 60 hands touch the tequila from beginning to end.
