The time frame is brief by any European standards, but the wine game would not be how it is now without the influence of Penfolds. Penfolds Bin 9 Cabernet Sauvignon is matured for 12 months in mixed oak barrels: 10% new French oak, 50% seasoned French oak, and 40% seasoned American oak. The 2014 vintage did not have a great start. South Australia was in a water deficit by the early spring and budburst was noticeable earlier than usual. Frequent windy weather did not help the conditions for flowering and in return yielded a smaller crop. Warm weather later in the season helped the fruit develop strong, structural tannins with an intense flavor. Penfolds Cabernet Sauvignon Bin 9 is a deep crimson color with aromas of fresh Boysenberry, rhubarb, and green apples. Quickly to follow are scents of dried herbs, tomato puree, and anise. Your palate will be pleased with this medium-bodied wine of equal proportions. At first, your taste buds are on a journey with red licorice, sour cherry, and black currant that seamlessly flows into a tart pomegranate finish. The tannins are fine and elongated with hidden notes of oak and faint cedar.
Bin 9 Cabernet by Penfolds can be enjoyed all the way until 2025, not that anyone intends on holding wine that long! With such a full body, sweet hints, and elevated tannins, Cabernet Sauvignon pairs well with meatballs, roasted duck breast, and brisket.
