JD Whiskey has a medium amber color with warm butterscotch, toffee and smoke aromas. Its palate is mildly earthy with a variety of flavors including caramel, mixed nuts, vanilla, ripe banana, raisins, chocolate, peppery and oily citrus. Jack Daniel’s Old No. 7 whiskey finishes smooth with vanilla and toasted oak, along with mild orange notes.
Jack Daniels Old No. 7 is created with patience, “age-old, near-extinct labor of whiskey love”, fresh Tennessee limestone spring water from inside a 2-mile deep cave and 80% corn, 12% barley and 8% rye. A little bit of starter yeast from a previous batch is used during distillation to give the whiskey a consistent flavor.
Promptly after distillation, the Jack Daniel’s Old No. 7 corn mash undergoes a special two-week filtration process in which its trickled drop by drop through 10 feet of densely packed sugar maple charcoal, giving it the smooth, smoky character that everyone loves This process is called the “Lincoln County Process” also known as “charcoal mellowing” or “The Extra Blessing” down in Lynchburg.
The Jack Daniel’s distillery fashions their own American White Oak barrels for whiskey maturation by meticulously arranging 33 wood staves, which are held together by pressure of the precise arrangement. The barrels are toasted and charred, drawing out and caramelizing the wood’s natural sugars. Jack Daniel’s distiller(s) decide when the whiskey has completed maturation, by its appearance and by tasting.
