Segura Viudas Reserva Heredad Cava
Segura Viudas Reserva Heredad Cava is a sparkling wine from the terroir of Penedès, Spain made with 67% Macabeo and 33% Parellada grapes. It’s a versatile and easy-drinking sparkling wine with an earthy and fruity bouquet. The palate is slightly acidic and yeasty, with a touch of sweetness. Floral, apple, and lemon notes mingle with the cava’s earthy characteristics. Dried fruit flavors are present from aging on the lees (maturation with the yeast sediment in the bottle giving it complexity), and some honey and brioche notes as well. Segura Viudas Reserva pairs nicely with seafood dishes, salty meats (cured meats are a great complement), and Chinese dishes like Sichuan chicken and oysters.

Cava is a sparkling wine made in Spain, with Macabeo and Parellada grapes, which sets it apart from sparkling wines from other countries and champagne, from France (champagne can only be made using Chardonnay, Pinot Noir, and Pinot Meunier grapes). The Segura Viudas winery has a long history of winemaking dating back to the 1850s, and the current owners, The Ferrer family of Barcelona, have been expert producers of sparkling wine for over a century. Segura Viudas is made from the first pressing of top-quality base wines from each vintage, and it’s aged on the lees for over 30 months. Maturation is completed by a final poignettage, or shake of the wrist, to enhance the contact of the lees with the wine, which draws out the complex floral, fruity, and earthy aromas.
